After being in the Green Bay area for four years, New York natives Ray and Cathy Sgambati were surprised to find that the area did not offer a restaurant that catered to their taste for New York-style pizza. Feeling a need to fill the void, the Sgambatis decided to take on the venture of opening a restaurant. Although the couple had never owned a restaurant before, they received plenty of advice from "Big Apple" relatives in the business and family recipes that come from their Italian heritage. |

The Sgambatis say that in New York, the national pizza chains don't survive because they can't compete with all of the family-owned pizzerias that offer traditional recipes which boast fresh ingredients and generous portions. This is what Sgambati's New York Pizza is all about. New York-style slices are big and bold, offering a whole new definition for what qualifies as a large pizza. Because the "New York way" to eat a slice of pizza is to pick it up and fold it in half, the Sgambatis were puzzled when local customers were asking for a fork and knife. They quickly had to adjust to the preferences of Green Bay area patrons.
